Clean Turkey Lettuce Wraps


Lunch seems to be the hardest meal for me to be good. Its hard eating clean when you're on the go. So I decided to make delicious lunches to tempt me to eating clean when its hard and less convenient. Here is my version of a lettuce wrap but made with turkey.

Ingredients

2 teaspoons olive oil
1 pound ground turkey
2-inch piece ginger, peeled and finely grated
2 scallions, chopped
2 cloves garlic, minced
1 teaspoon red pepper flakes
1/4 cup hoisin sauce
1/4 cup chopped bell pepper
1/4 cup chopped water chestnuts
Salt and freshly ground black pepper

1 head iceburg lettuce, leaves separated, cleaned and dried


Directions
In a skillet over medium-high heat, add the oil and saute until brown. Stir in ginger, scallions, garlic, bell pepper, water chestnuts, red pepper flakes, and hoisin and cook for 1 minute. Remove from the heat and season with salt and pepper. Serve warm wrapped in lettuce cups. Season with a dash of white vinegar for even more yum.
