15 Minute Recipes: Homemade Corn bread



      I know a lot of you use the boxed mixes for things like corn bread, which is fine. Did you know making it from scratch can be nearly as fast? I wanted to share an easy recipe that takes just about the same amount of time to make, that doesn't include all of the extra preservatives and sodium.

Ingredients:
1 cup flower
3/4 cup cornmeal
3 tablespoons sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/4 cup melted butter


       Preheat the oven to 400 degrees. Combine all of the dry ingredients in a medium size bowl and all the wet ingredients in another. Mix the wet mixture well to break up the eggs. Add the wet mixture all at once to they bowl of dry ingredients. Stir just until moistened (small lumps are fine and will bake out.) Pour onto a greased 9'' x 9'' dish for thicker or sheet pan for thinner pieces. Bake for 10-15 minutes until a toothpick poked into the center comes out clean. Serve warm with butter.

Variation: 
   
    Add in 1/2 cup of cheddar cheese or a few jalapeños before you pour it in to bake.
